Cultural Exchange - Crepes Cooking Class with Joelle

Please join Joelle to learn how to make French crepes. You are welcome to make them at the same time or just watch.

Here are the required ingredients for the crepes.

Batter

  • 2 1/4 cups of white flour
  • 2 eggs
  • 1 quart of whole milk. You can  use 2% fat milk if you wish
  • pinch of salt

Roux

  • 2 tbsp flour
  • 2 tbsp butter
  • salt, pepper
  • nutmeg (optional)
  • milk

Mushroom and ham filling (ham optional)

  • 1 container of white mushrooms or mixed mushrooms of your choice
  • garlic
  • 1/2 cup sliced ham cut in small pieces
  • 1/2 cup of grated cheese (gruyere or cheddar) + 1/4 cup for the gratin
  • 1/4 chopped parsley

Prepare ahead of time

  • Slice the mushrooms and sautée in olive oil and a little bit of butter, the garlic, salt and pepper to taste
  • Dice the ham into small pieces
  • Grate the cheese
  • Chop the parsley
