Cultural Exchange-Okonomiyaki Cooking Class With Debra

Please join Debra for an Okonomiyaki Cooking Class. We will make these delicious savory pancakes stuffed with cabbage, vegetables and shrimp (optional). The basic ingredients are available at Market Basket or any well-stocked supermarket. (If you would prefer just to watch and learn how to make these, you are welcome to join us.)

  • To help make the class go smoothly, some preparation before the class is necessary. Organize, measure and cut (if indicated) ingredients  


    Ingredients to make two 6-inch pancakes

  • 1 cup flour
  • 1/2 teaspoon salt
  • 1 cup water
  • 2 eggs
  • 2 cups cabbage shredded (bags of coleslaw blend or red and green cabbages and shredded carrots can be used)
  • 1/2 red pepper, cut into ΒΌ-inch strips
  • 1 carrot, cut in julienne strips
  • 1/2 bunch scallions
  • 8 uncooked shrimp, peeled and deveined (optional)
  • Canola oil for frying

Sauce

  • 1/3 cup ketchup
  • 1/4  apple
  • 2 tablespoons Worcestershire sauce
  • 1/2 teaspoon soy sauce

OPTIONAL TOPPINGS (These are not necessary to enjoy the pancakes but are authentic toppings.  They are available at the Japanese markets Maruichi (Brookline and Arlington or Ebisuya) and most at HMart and of course online. The condiments are all available in small sizes.)

  • 1 sheet nori (roasted seaweed)
  • Mayonnaise
  •   Bonito flakes - katsuobushi 

Red pickled ginger strips -Kizami or beni shoga (not sushi ginger) 



  • Bulldog sauce
